I am hosting two baby showers this week. One, I am like a co-co-co-co-host. My job is to bring the punch! I have a great punch recipe that I hope to share with you. Then on Sunday, we are showering the first baby in the family! We will have about 30 people over to the house. I am in charge of savory snacks.
On top of all that, we just bought a new double oven range for our house. So the rest of the meals for this week are low cost options. To do this, I built my menu around veggies, beans, and grains.
Monday (today!) We are having baked potatoes with spinach salad
Tuesday will be fried rice with stir fried veggies. My fried rice is super simple to make. I am going to make my rice tonight and just do the super quick prep tomorrow when I get home. I am also going to make the punch on Tuesday. It needs an overnight freeze then a day of thaw to make the punch nice and slushy.
Wednesday and Thursday are crock pot days. I am going to do my crock pot bean soup for one of the says and a crock pot pulled pork for the other day.
Friday, I never cook on Friday.
Saturday might be waffles for dinner. MMmmMmm
Sunday is shower day! It is a 2 o’clock shower. We are getting a honey ham, rolls, sandwich fixings, and I am making a homemade honey mustard for the sandwiches. I will be making my cheese dip for a veggie platter. I think I am going to make it Parmesan and black pepper dip. Yum! With all that, we will probably also make a spinach dip and I was thinking about making a snack like cinnamon pretzels or chex mix. Paul’s mom will be bringing cake, cookies, a cheese ball from Mel’s Kitchen. We will also have homemade baklava from the mommy-to-be’s mom. I will also be making sweet tea and we will have beer and wine.
BUSY week! I hope to have a fried rice post, a honey mustard post, definitely a punch post, and at least one crock pot post. Just maybe not all this week. I have also started up another grad school class. Sigh. They say when we start having kids it only gets busier. God bless moms. I don’t know how you do it!
